love when the strawberries come out.
I used up the left over black beans for a new dish.
I slightly mushed up the black beans and added in a caper/mushroom/olive tomato sauce mixture and let it chill in the fridge overnight.
So the following night i had it with baby potatoes, a mixed salad and courgette slices, was realy nice actually!
I recon this would work well in mexican dishes or in jacket potatoes.. the list is endless
To be honest ive enjoyed making new meals that dont always involve tofu..major rut
but ofcourse...there has to be tofu dishes in here somewere!! hehe
I like experimenting with diffrent tofu flavors and this was no exception.
I made a mixture of lemon juice, tamari and mixed herbs, i dipped the tofu in the sauce and then baked it in the oven usuing a tin foil pouch full of the lemon juice.
for the last 10 mins i opened the wrapper and let it crisp up slightly,
The potatoes are also cooked in the same mixture.
I did somthing a tad diffrent this time, i maranated the tofu in orange juice and peel over night aswell as my potato slices,
I baked it in the oven for 30 mins with orange slices
BLACK BEAN BURGERS!!
Many times before i have attempted these but this time i was determined.
I liturly mashed up some blackbeans with tamari sauce and coated it in soya milk,
i then covered it in gluten free bread crumbs and baked it in the oven for 30 mins.
and lastly i grilled it slightly to crisp it up.
In my next post im going to cover the Puttanesca that was sugested :D
